APPELLATION D’ORIGINE CONTROLEE (AOC): Touraine

VINES/GRAPE VARIETY: 100 % Cabernet franc, 45 years old vineyards. 35 hl/ha

VINEYARDS: Located on the valleys of St Martin-le-Beau, direction East/West on argilo-limestone.

CULTIVATION METHOD: Organically cultivated, in soils at 100% workability (earthing-up, ploughing down and harrowing).

WINE MAKING PROCESS: Manually harvested via successive sorting. Extraction is effected using pneumatic pressing, double fermented in tanks for 3 months. The grapes are harvested at 12.6 ° to ensure they maintain their potential.

MATURING: 14 months in 1 to 4 year old barrels before MEB barrels.

PALATE: Rich nose of black fruits (Blackberries and blackcurrant) as well as a hint of vanilla. Present tannins of ripe fruits already well melted thanks to a long wine maturing process. Serve

between 16 and 18 °. Enjoy with red meats.

VINEYARDS: located on the valleys of St Martin-le-Beau, direction East/West on parakeets, white pallets, flints and silt.

CULTIVATION METHOD: Organically cultivated, in soils at 100% workability (earthing-up, ploughing down and harrowing).

WINE MAKING PROCESS: Manually harvested via successive sorting. Extraction is effected using pneumatic pressing, double fermented in tanks. The grapes are harvested at 13,4 °.

MATURING: 9 months in half-hogshead barrels before MEB barrels.

PALATE: Rich nose with red berries and black fruits. Present tannins of ripe fruits which melt after 2 years in the cellar. Serve between 16 and 18 °. Enjoy with red meats.
